Goose Liver with Grapes

For 6 persons :

Ingredients :

1 raw duck liver, of best quality, light pink equally coloured, without any spot and with well formed lobes.
3 dozen of big white grapes,
1/2 glass of Xeres,
Vinegar,
Salt,
Pepper from the mill.


Preparation of the Liver:

Using a small and sharp knife, get the nerves out of the liver without damaging it,
Take the gall blatter gently away, without percing it, otherwise your liver will become too bitter to be eaten.

Preparation :

Cut the liver into equal escalopes,
Flour lightly.
Heat a nonstick frying pan on strong fire .
When it is warm enough, put the escalopes carefully inside,
Get the escalopes browned on both sides. 
Get rid of the excedent of liver grease away ,
Keep the escalopes warm,
Deglaze the frying pan with some vinegar,
Add the Xeres and the grapes,
Heat the whole gently up.

Serve the escalopes surrounded by the grapes on warm plates.
Some slices of toasted bread,
 
And serve with a Gewurztraminer Late Harvest.

And enjoy it !!!
