" Sulze " or " Salt Spring " appears in 708.
Soultz, rich in vestiges of occupation of all the times, was part of the episcopal seigniory of Rouffach. Fortified prior the middle of the 13th century, the city grew thanks to the disappearance of the villages close to it : Alschwiller, Airatzwiller, etc..., and became the church town of a episcopal bailiwick. Many convents had properties in Soultz, the quality of the wine there being excellent. The " Saint John's hospitallers " (later the Order of Maltese) founded there towards 1269 a " Commanderie ". The Cistercians of "Lieu Croissant " (Doubs) had a field there, with the vault of the Three Kings (listed in 1254) and a leper-house. The nobles of Soultz, vassals of the bishops, resided at the castle of " Bucheneck ", quoted as of 1249. The city suffered from the successive passages of the English, the lord " Coucy " in 1375, and of the " Armagnac " of dauphin Louis in 1444. The participation of the population in the Peasants' War in 1525 caused the removal of the corporations. Because of its proximity to the front line, Soultz experienced heavy damages during World War I .
