Red Bream in a Mercurey sauce
This recipe is a speciality of the Restaurant "La Ferme ELTER" in Colmar

Mode of preparation : Red Bream Filet in a Mercurey sauce Copyright ARdV

  • Flatten the fish,
  • Salt, pepper,
  • Steam,

  • To flambé the Mercurey wine,
  • Add the thinly sliced shallots,
  • Reduce, then bind with the mashed carrots,
  • Whip up with the butter,
  • Rectify the seasoning.

 

  • Serve  with alsatian noodles, vegetables, and seafood

Recommended wine: Mercurey ( Burgundy Red ).

And enjoy your meal  ! ! !
