Mode of preparation : 
- Flatten the fish,
- Salt, pepper,
- Steam,
- To flambé the Mercurey wine,
- Add the thinly sliced shallots,
- Reduce, then bind with the mashed carrots,
- Whip up with the butter,
- Rectify the seasoning.
- Serve with alsatian noodles, vegetables, and seafood
Recommended wine: Mercurey ( Burgundy Red ).
